Cooking with Patty Pan

This week I decided to use my giant light green benning patty pan squash that I had been storing since September. We grew this in the garden and it was one of our entries at the fall fair. I peeled this beauty, scooped the seeds and cut it into chunks to batter and fry into zucchini sticks! What a hit! They were delish! The batter was a simple recipe of homemade bread crumbs, Parmesan cheese, salt, garlic powder, and BBQ rub. Dipped the pieces in egg, rolled them in the batter and fried in olive oil! What a great winter side dish!
